Preheat the oven to 350°F (180°C).
Peel and slice the apples. Grease and flour a baking dish, then layer the apple slices.
In a bowl, whisk the eggs and sugar until light and fluffy.
Sift in cornstarch, then add cream and vanilla (or cinnamon). Mix well.
Pour the batter over the apples in the dish.
Bake for 30-40 minutes, until golden and set. Let cool before serving.
